Couch and Nachos

Hope you had a great weekend! We definitely did. I wanted to thank to Angie for letting us come down on Saturday and hang out with them. There are some friends in life that are really worth hanging on to and I know she is one of them!

I also wanted to thank Wade's cousin Sara for the couch and other furniture that Wade's parent so graciously hauled here from Chicago. What was meant to be a quick process of transfering the couch from the trailer to the basement, turned in to an ordeal that took a couple of hours. It resulted in dismantling half the couch, a trip to Lowe's, and lots of squeezing, pushing, and manuvering to get that darn couch through the door!

And finally, we had nachos last night and instead of salsa on them, I tried Texas Caviar. Have you tried this stuff?!?! SO FABULOUS! Like, right up there with Pottery Barn Dip!

Texas Caviar

1 can of garbanzo beans (chickpeas)
1 can of black beans
1 can of Navy beans
1 can of corn (I used frozen)
2 avocados
1 small red onion
a bunch of cilantro
Italian dressing
sugar
lime juice
salt


Directions:
Drain the beans and corn well. Put them in a bowl. Chop up the onion into very small pieces. Add them. Add about 1/3 bottle of Italian dressing to the mixture. Squirt in a whole buncha lime juice. Add about 1/2 cup of sugar. Then shake on some salt. Stir well. Cover. Chill overnight in the refrigerator.


Before serving, drain the Texas Caviar quickly in a colander. Cube up the avocado and add it. Rip up as much cilantro as you want and add it too. Toss together. Can be served as a dip, or on nachos, or with shredded chicken as a salad. 

(I also added some drained, fire roasted diced tomatoes so it would be salsa-like, but they're not required)

It doesn't look so great in the picture, but believe me, it was tasty!
